Egg Salad with Poblano pepper

Poblano peppers are so flavorful they bring some amazing smoky flavors to a classic egg salda sandwich.

Simple and quick!

Ingredients

8 Hard boiled eggs
1 Poblano pepper
4 Tbsp mayonnaise
1/4 Teaspoon Salt
A pinch of black pepper
8 slices of bread lightly toasted

Instructions

Boil the eggs for 4 minutes.

Peel and chop them.

Roast the pepper directly on the fire until is completely black.

Mix the egg with mayonnaise, salt, pepper and poblano.

Divide the mix evenly on 8 slices of bread.
